How to Make Ribs with Cherry Jalapeno BBQ Sauce

1. Ingredients for Cherry Jalapeno BBQ Sauce
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. liquid smoke
- 1 tsp. white pepper
- 1 tsp. salt
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. ground mustard
- 1 tsp. cayenne pepper
Directions: Mix all ingredients and pour over hot food or as desired in a jar.
Notes: The sauce is 100% smoked and formulated to be thick and meaty. If you prefer less smoked flavor use less Worcestershire.
2. How to Make Cherry Jalapeno BBQ Sauce
- 2 cans whole jalapeno peppers, seeds and stems removed. 8 oz can of crushed pineapple in juice.
- 1/2 cup of white vinegar.
- 1 tsp sea salt.
- 2 tsp onion powder.
- 1 tsp of cayenne pepper.
- 1/2 cup of sugar.
- 4 cups of ketchup.
- 1/2 cup of apple cider vinegar.
- 2 tablespoons of balsamic vinegar.
- Water for scraping.
Instructions: Pulse jalapenos in a food processor until finely ground; add cayenne, maple syrup, salt and sugar. Potatoes with juice, jalapenos and pineapple juice are the best of both worlds and make for a great concoction. To make dollops, mix ketchup with 2 cups pineapple juice and 3 cups yellow jalapenos; add vinegar, sugar and salt and beat with a spoon until combined. When ribs are grilled or roasted outside, allow them to cool in a large bowl. Then, using tongs, remove them from the liquid and allow to drain in a colander lined with paper towels. When the fat has yet to drip off, cut into 1-inch pieces. To flavor the sauce, add the diced jalapenos, scallions and chopped cilantro. If you wish, mix in diced apple. As the sauce sets, divide it equally between two plates, top with ribs and serve. This sauce holds well. Makes 8 servings at 9 ounces each.

Ingredients 2 + ounces pickled jalapeno peppers 1/3 cup sugar 1/2 teaspoon chili oil 1/2 teaspoon kosher salt (optional) A few pinches of pepper, to taste 3/4 cup whole-grain white flour 1 teaspoon maple syrup Directions Chop the peppers and mince the jalapenos (leaving the seeds and skin behind) into small pieces. Place the chopped peppers and jalapenos in a glass jar. Seal the jar. Let the mixture sit out for 1–4 days, shaking the jar twice daily. Strain, and add all of the ingredients, plus more maple syrup, salt and pepper, to your favorite grain bowl. Mix well. If this sauce doesn’t coat the bottom of the bowl completely, add more maple syrup to the liquids (if you like a thicker consistency, thin as needed with broth or water). Refrigerate until well chilled, then store in the fridge in an airtight container for up to one week.
